Red Bell Pepper Jelly Made From Wild Veggie Red Bell PepperRed Bell Pepper Coulis with Grilled Swordfish

Yield: 5 gallons

Ingredients:

35 1/2 lbs Wild Veggie Red Bell Pepper
2 lb Cornstarch
4 1/2 lbs Wild Veggie Red Bell Pepper, cold
16 oz Lemon Juice
To Taste Salt
To Taste Pepper
Swordfish, grilled
Garnish Lemon Wedge

Sauce Preparation:

  • Bring to a simmer the larger amount of Wild Veggie Red Bell Pepper in a sauce pot
  • Mix the cornstarch and smaller amount of Wild Veggie Red Bell Pepper together and whisk into simmering sauce
  • Bring to a boil to thicken the sauce
  • Add lemon juice, salt, and pepper To Taste

Assembly:

  • Place sauce on plate
  • Place swordfish on top of sauce
  • Garnish with lemon wedge
