Red Bell Pepper Jelly Made From Wild Veggie Red Bell PepperThai Chicken with Cauliflower Curry Sauce and Snow Peas

Ingredients: (yield: 4 servings)

1- 2½ lb Chicken, cut into 10 pieces – skin removed
To-Taste Salt and White pepper
2 oz Vegetable Oil
2 oz Green Onions – white part, sliced thin
1/2 oz Garlic, chopped
1/3 oz Ginger, chopped
14 oz Wild Veggie Cauliflower
10 oz Coconut Milk
2 tsp Curry Powder
1 tsp Salt
1/8 tsp Cayenne Pepper
1/2 lb Snow Peas
4 oz Steamed Rice
Garnish Green Onion Tops,
sliced

Sauce Preparation:

  • Season chicken with salt and white pepper
  • Heat oil in skillet, brown chicken pieces on both sides; remove and reserve chicken
  • Drain off all but 2 tbsp of the oil and add onions, garlic, and ginger, sauté for 2 minutes on medium heat
  • Add Wild Veggie Cauliflower, coconut milk, and curry, bring to a simmer
  • Return chicken to pan, add salt and cayenne pepper
  • Cover and simmer for 20 minutes
  • Remove cover, add snow peas and simmer for 10 minutes

Assembly:

  • Serve over rice, garnish with green onion tops
