Red Bell Pepper Jelly Made From Wild Veggie Red Bell PepperPotatoes with Cauliflower Sauce

Ingredients: (Yield: 6 Servings)

4 oz Onions, small diced
4 cloves Garlic, chopped
1- 2” piece Ginger, chopped
6 each Idaho Potatoes, peeled and cut lengthwise into quarters then in half
2 oz Vegetable Oil
1 tsp Turmeric, ground
16 oz Chick Peas, can and drained
16 oz Wild Veggie Cauliflower
1 tbsp Chinese Parsley
2 tsp Coriander, dry
1 tsp Cumin, ground
2 tsp Salt
1 tbsp Lemon Juice
¼ tsp Cayenne Pepper

Directions:

  • Purée onions, garlic, and ginger in food processor
  • Heat oil in 10’’ sauté pan, add potatoes and sauté carefully not to brown the potatoes for 5 minutes
  • Add onion purée, chick peas and turmeric
  • Sauté for 5 more minutes
  • Add Wild Veggie Cauliflower and remaining ingredients to potatoes and simmer for 20-25 minutes covered, stirring every 5 minutes, until the potatoes are tender
