Red Bell Pepper Jelly Made From Wild Veggie Red Bell PepperPork Piccata with Red Bell Pepper Sauce

Ingredients: (2 servings)

(Pork Piccata)

5 ounces Pork loin, thin slices
To Taste Salt and pepper
1 Tblsp Flour
1 ea Medium Egg
1 Tsp Grated Parmesan cheese
(Red Bell Pepper Sauce)
5 ounces Red Bell Pepper Frozen Vegetable Soup
1 Tblsp Ketchup
To Taste Salt and pepper
1 Tsp Olive oil

Preparation.

Pork Piccata

Season pork slices with salt and pepper; lightly dredge in flour and shake off excess

Mix egg and grated cheese together

Dip pork slices into egg mixture

Heat oil in frying pan, sauté pork slices until golden brown on both sides

 

Red Bell Pepper Sauce

Heat the Red Bell Pepper soup in a deep pan over medium heat, simmer, stir continuously until reduced by 1/3rd and thickened; add ketchup, season with salt, pepper and olive oil to taste

Place pork onto serving dish and ladle sauce over

 

Recipe Notes

You can also spread the red bell pepper sauce on toasted bread and melt some cheese on top, and serve it as “pizza toast”.

By boiling to thicken the sauce, the smell of raw red bell pepper can be eliminated.

The sauce should be used abundantly to emphasize that it is “sauce-to-eat” made of vegetable.

The sauce may be served as well on sauté or fried blue-skin fish, such as mackerel sardine.
