Penne Pasta with Red Bell Pepper Pesto
Ingredients: (Yield: 4 servings)
1 # Penne Pasta, cooked, drained and hot
3 oz. Pine Nuts
3 oz. Grated Parmesan Cheese
8 oz. Wild Veggie Red Bell Pepper
3 oz. Olive Oil
To-Taste Salt
To-Taste Black Pepper
30 Leaves Italian Parsley
Grated Parmesan Cheese for Garnish
Sauce Preparation:
- Grind pine nuts in a food processor until almost a paste
- Add Parmesan cheese and blend
- While machine is running, stream in Wild Veggie Red Bell Pepper
- Again with machine running, stream in olive oil until emulsified
- Season to taste with salt and pepper
Assembly:
- Place hot pasta in a large mixing bowl and add parsley leaves and sauce
- Toss together until pasta is covered
- Portion pasta into serving bowls and garnish with remaining Parmesan cheese
