Cold Edamame Ginger Soup
Ingredients: (Yield: 1 quart)
24 oz Wild Veggie Edamame
8 oz Chicken Stock, prepared
½ oz Green Onion, whites, thinly sliced
2 oz Ginger, minced
2 tbsp Butter
4 oz Cream
To-Taste Salt
To-Taste Pepper
Procedure:
- Sweat onions and ginger in butter
- Add Wild Veggie Edamame and chicken stock - simmer for 10 minutes
- Season to taste with salt and pepper
- Cool, add cream and chill well
- Season with salt and pepper
