Cauliflower Dressing for Tomato and Basil
Ingredients: (2 servings)
3 ½ ounces Cauliflower soup, thawed |
| 1 Tblsp Mayonnaise |
| 1 Medium Tomato |
| 2 sprigs Fresh Basil |
| To Taste Freshly ground Black Pepper |
Preparation.
Place cauliflower soup into sauce pan and heat at medium temperature, and reduce by 1/3rd.
Transfer soup to stainless steel bowl and completely it cool down.
Add mayonnaise and black pepper to soup and mix well to make dressing. Cover and refrigerate.
Thin-slice tomato, place onto a plate, garnish with basil, top with dressing and freshly ground black pepper.Recipe Notes
This menu takes advantage of the white color of cauliflower; by using it as a salad dressing for colorful vegetables like tomato, the Wild Veggie Cauliflower can create the effect of color contrast.
Refrigerating the sauce prior to serving enhances the flavor and makes it tastier.
The vegetable soup can be better served after being boiled down, since the original soup contains excess water and it does not blend well as-is with vegetable.
