Carrot Mousse
Ingredients: (Yield: 4 Servings)
1 cup Wild Veggie Carrot
2 each Eggs
1/2 cup Sugar
1 tsp Ginger, ground
1/4 tsp Nutmeg
1/4 tsp Salt
2 tsp Cornstarch
1 cup Heavy Cream, whipped
Preparation:
- Heat Wild Veggie Carrot in saucepan
- Mix together the eggs, sugar, spices and cornstarch
- Slowly add hot carrot to egg mixture and whip
- Return to pan and bring to a boil
- Place in mixing bowl and onto an ice bath to cool
- Fold in whipped cream
- Pipe into serving glasses and garnish with mint
