Carrot MousseCarrot Mousse

Ingredients: (Yield: 4 Servings)

1 cup Wild Veggie Carrot
2 each Eggs
1/2 cup Sugar
1 tsp Ginger, ground
1/4 tsp Nutmeg
1/4 tsp Salt
2 tsp Cornstarch
1 cup Heavy Cream, whipped

Preparation:

  • Heat Wild Veggie Carrot in saucepan
  • Mix together the eggs, sugar, spices and cornstarch
  • Slowly add hot carrot to egg mixture and whip
  • Return to pan and bring to a boil
  • Place in mixing bowl and onto an ice bath to cool
  • Fold in whipped cream
  • Pipe into serving glasses and garnish with mint
