Rustic Broccoli Bread
Ingredients: (Yield: 2 – 18 oz loaves)
24 oz All Purpose Flour
1/4 oz Instant Yeast
1/8 oz Salt
1/3 oz Olive Oil
1 ½ oz Parmesan Cheese
8 oz Wild Veggie Broccoli
9 oz Water
Directions:
- Place all ingredients in mixing bowl
- Using dough hook attachment, mix for 5 minutes at speed 1, and 10 minutes at speed 2
- Proof in separate mixing bowl until doubled in size
- Divide dough into two equally weighted balls
- Place on cornmeal-dusted parchment paper and sheet pan and proof again until doubled in size
- Bake at 425° for 25 minutes
- For best results, bake on preheated pizza stone
